For Internet + Office and video, I would recommend a book with an Intel Core i5-1035G1 for the best possible battery life, if you absolutely want Intel.

The i5-1035G1 has no problem with web and office and its iGPU can also decode and encode the modern H.265 / HEVC video codecs in hardware. If you only want to see videos and not edit / recode them, this SoC should meet your needs.
