Good work laptop up to 700 euro?

Can you recommend a (current?) Laptop for work (school / teacher) up to 700 euro, which comes with a relatively good battery life, touch function and possibly with a pen?

An SSD and 16GB of RAM wouldn't be bad either. Few more euro are no problem.

In terms of performance, you won't have any problems with that. The device is not suitable for games, but that's not part of your plans anyway. The only question would be whether 256 GB of memory is enough for you. It would be enough for me personally, but of course everyone has to assess that for themselves.
