I would like to buy a gaming laptop, either a Dell g5 with gtx 1060 6gb (1059 euro at Saturn) or an HP Pavilion with Gtx 1060 3gb (850 euro at Alternate).
I'm not sure if it is worth spending 200 euro more for the Dell with the 6gb graphics card. The rest of the components are very similar.
Which one would you prefer?

in the case of the 3gb GPU memory, I would say that this is not enough for today's conditions, but of course that depends on the games that run on it… I would also say that 8gb RAM is pretty close to 2019 and i5 would rather have an i7 soft but man can't have everything, because in the end it makes the most sense not to buy a laptop for gaming:-)
This decision is relatively simple:
If you want to play with the laptop synonymous current / complex 3D games, then worth the extra charge for the GTX 1060, as this graphics card is about 4x faster than the GT 1030.
If you use only Office, Internet & Multimedia, but the GT 1030 is completely sufficient.
For 3D games, the 1030 would be very slow, as you could play at most in low details, while the 1060 also liquidates high details.

PS: In the answers below, I read that you also want to play, so then I strongly recommend you the DELL G5 15 5587 I5 with the GTX 1060, the price of 1060 EUR is also quite good for this performance.
PPS: For 800 EUR you would of course get a much better (and future-proof) Gamer PC, with almost twice the performance, but I assume it must be a laptop with you, right?

If you had 16GB of RAM, the difference between 3 and 6GB is only about 10-15%

The HP is equipped with a castrated GTX 3GB which not only has less RAM but also the clock is castrated.
HP and Dell both only have a 128GB SSD.

In addition, you have to note that you can compare neither CPU nor GPU for notebooks with CPU and GPU for desktop… Notebook CPU and GPU are always a lot slower than their desktop pedants.
