I set the screen brightness of my gaming notebook to max, but the screen darkens in between during normal use (no games). What can that be? Are there any '' hidden '' settings that you have to change so that it doesn't get darker in between?

There's an energy management. When "not in use", certain savings measures are gradually made.
It works like a staircase timer, mouse movements and keystrokes reset the timer. Unfortunately not the gamepad!
The BIOS can also have energy-saving functions that are separate from the operating system. So if the Windows energy settings are all switched off, look in the BIOS (or UEFI).
