I write and paint / draw with the left. I actually do most of the things with my right hand, such as eating, opening a bottle, putting on shoes with my right, mouse from laptop with my right, etc. But I also do some things with my left. Then what am I, right-handed or left-handed or double-handed?

I'm just like you. Write with the left, everything else with the right. Still see myself as left-handed, since most definitions assume which hand you write with.
I think you're more of an ambidextrous.

I use the mouse with the left, but I write with the right. So I'm right-handed.
You are left-handed. It's the same with me. You're just so good with the right because the world is 90% right-handed and you adapt. I'm also left-handed and I also write with links, but I play with a normal right-handed guitar and that is pretty good. I can't move the PC mouse with my left hand at all because you are used to it being on the right side.
