ChromiumOS or ChromeOS (based on Linux)
It has no great performance requirements and has good compatibility with touchscreens. For surfing and for office activities should be perfect.
ChromeOS gives you access to the Play Store so you can use Android apps / games. You should also be able to run Linux programs.

You need the ISO. After downloading the ISO, use this https://www.balena.io/...io/etcher/ tool to flash the ISO onto an empty USB stick.
With the convertible one must deactivate in the UEFI first secureboot. Then boot the stick. PhoenixOS is first in English. In the settings you can change the language and keyboard layout to German. The Google Play Store is easy to install. I would just give it a try.
PhoenixOS requires little system resources and runs fast.

To be honest, I do not think GNU / Linux distributions are great for working on a touch screen.
The most likely Android would be in question (I would not want it)
