I just understand net why you want to get such an expensive laptop. To work a 700 euro laptop is completely sufficient and to gamble you get a desktop.
What areas of application do you have?
I would only use the RTX 5000 if you absolutely need the instruction sets of a Quadro card.

A laptop with 512GB NVME SSD, Quad Core CPU, 16GB RAM and 4K IPS panel with a small GPU should be sufficient!
Maybe a MacBook makes more sense because of the battery life!

Depends on your area of application. If your software needs instruction sets from the RTX 5000, then definitely the laptop with the RTX 5000. If you need a lot of RAM, CPU power or the like, then the other laptop
