You can safely turn off Minecraft in the middle of the game - everything is saved automatically.

Yes, but when it crashes, chunks may shift. So either whole chunks are gone up to the void or chunks are moved to where they don't actually belong.
Therefore I recommend you to make a backup regularly, so just copy the folder of the world.
