I wanted to ask if there are modular laptops, so if something should break you don't have to throw away the whole laptop. Are there any manufacturers or something? Or you can do that with every laptop e.g. Just increase the RAM, even though it actually contains 8gb, just increase it to 16gb.
Many manufacturers offer from the modular system to exchange modules.
Modular laptops in the way you want them don't really exist, or not that I'm aware of them. Replacing or adding to the main memory or hard drive is possible with most laptops within the framework of the technical conditions.
The form factor of the hard disk and main memory, the type of transfer of the hard disk, the maximum supported size of the main memory or how much per bar and the clock frequency of the main memory must be taken into account in order not to buy too expensive.
Unless you mean a configuration when you buy it. That is of course possible.
So you can replace RAM and so on, do you lose the warranty or something?

It depends on the exact warranty from the manufacturer, but in general you shouldn't lose the warranty for any of these operations. If it turns out that you have accidentally broken something or the defect is directly attributable to your conversion, it will of course look different.
No, the slots are not sealed with a warranty sticker. I upgraded my Dell to 32 RAM. I think that in almost all of them the slots are only behind a screw plate
Is that also possible with newer laptops because somehow I can't find a screw plate or do you have to remove the case (sorry I'm not a professional:-))
Usually you have an instruction manual for this. If not, download it from the manufacturer's site. Then you can see what can be done.
