What are the possibilities?

Short explanation: Relaxed and boring job, very good earnings, but no feeling of success. As a result, I'm underwhelmed.

There are hardly any comparable jobs nearby that are paid so well. Most of the time you have to work really hard and maybe only get a little over half.

Advantage: In my work I would have the time to work on other things that could challenge me, but at the moment I can't think of anything. I enjoy writing, but as a copywriter you usually only have stupid things.

Can someone give me tips on how to work with a notebook on the side on something that is a challenge and that gives a certain feeling of success?

You could write a book. But I would rather tell you to tell your boss that you would like to take on more responsibility.

For example, you could cut videos for others, digitally paint or edit pictures.

Sure, but what do you do when there are no jobs nearby that would fill you? Move? Always easier said than done to give up a safe and very well paid job. I was thinking of starting with the police, even if I earn a whole lot less.
