Regarding lack of storage space via icloud and backup, I can tell you that you can also do your backup via usb on the computer / notebook.
I personally do not have an iCloud service other than "Find my iPhone" and only make my backups encrypted via iTunes.

It depends on the damage. Since everything is encrypted on the iPhone, a prof. Data recovery can be expensive (in the worst case 4 digits).
Software will usually only help if you can still confirm on iPhone that the data should be transferred. Simply pulling data without confirmation does not work and if not then with affordable tools.
