Before that, I didn't play real RPGs other than Pokemon. Whereby Pokémon is something completely different. Now I've played vampire and have to say that I really like it.
I'm now looking for other RPGs that contain action, different options for action, different ends and maybe a few puzzles in between. So that you not only work towards the same end, but you can also influence the story through actions. Or you have at least several actions to choose from without being able to follow a single path.
Best for the Nintendo Switch. I'm not a PC player, I only have an office laptop haha.

There's a nice large selection of RPGs and JRPGs for the Switch.
Brand new in the eShop: The Borderlands Handsome Collection. It's a mix of first person shooter and RPG. So a lot of action is guaranteed. There's:
Bossfights
a level system for optimization
Coop action with up to 4 players
A big open world with many big and small side quests
Funny main and supporting characters
And a lot to loot.
Unfortunately no multiples end
You don't even notice that it's one of my favorite games. If you decide to do so then write me a PN I'm always up for a nice coop round.
If it is more like the classic western role-playing game then I recommend The Witcher 3. It is not necessary to have played the predecessors to understand the story. You get
A dark medieval setting
Monster hunts
magic
Sword fighting
Branched stories and very nice side quests, the outcome of which can also be shown later in the game (positive and negative)
An open world
I think this game best fits your needs
The classic Skyrim should not go unmentioned in such a list. But I'm not a big fan of this game. But my opinion is not a universal law, just take a look at Skyrim on YT and decide for yourself.
Then there are the JRPGs. Role-playing also has a slightly different approach. Here you will often find turn-based battles and the focus is more on the story, with some games also drifting to their very foundations. Good representatives would be here:

Another approach for role-playing games that focus more on action and looting and levels would be the dungeon crawlers and rouge likes

And then there are RPG tactics in the world of role-playing games. They are probably the furthest away from your wishes in the world of role-playing games but well worth a look as they can be very captivating. I just wanted to have mentioned it once. Here I recommend a look at

Fire Emblem Three Houses
