I get the Lenovo l340 gaming for Christmas. An 8 GB RAM module is currently installed there. According to Lenovo's data sheet, 16 GB of RAM go.

Now I have discovered this notebook at a dealer that only sells to students. This offers it already upgraded to 16 GB RAM and with the possibility to upgrade to 32 GB RAM.

I thought that was a mistake, but he says that this is possible without any problems and that some retailers would generally only give 16 GB of RAM as the highest.

Is he right that I can easily expand it to 32 GB without any worries or problems? And if so, why do the manufacturers only give 16 GB of RAM?

And if I should upgrade it, I have to do it in an authorized workshop because of the guarantee. How do I get this out? And would you only upgrade it to 16 GB or 32 GB?

According to Lenovo, the L340 Gaming has a soldered latch + a replaceable latch, each with 8GB Ram. The dealer probably missed that, with 2 interchangeable bars 32GB might have been feasible, but not so.

Depending on what you're doing, it should already be a 512GB SSD (in M.2 format!).

To set up Windows again, you should prepare a USB stick, MS has a tool (media creation tool) for this. As a precaution, write down the product key if it is not glued to the bottom.

32 GB for gaming is currently inappropriate.
16 GB are currently faster (as of 12/2019) because 32GB have longer addressing times.
With 128 GB-M2 directly on the chipset you really don't get far and you will reach the limit quite quickly if several games are installed.
If possible, order the NB with 512 GB.

Soldered here means that you have one slot, where the second one would be, a memory stick is permanently installed and not replaceable.

At the dealer campus, I can download two data sheets for the laptop, each describing it differently - for the same product!

Since his upgrade offer consists of exchanging the existing lock with a larger one, I assume that there's only space for one soldered lock. That means you have to use his offer for more ram directly, because later nothing can be changed. And 16GB would be good, even if 8 would be enough. With 8GB, the SSD is used to swap data earlier and one or the other game (eg BF5) is very grateful for more ram. However, this is not so noticeable in everyday life.
