It doesn't matter whether the data is retrieved directly from the laptop itself and displayed there, or whether the data is passed on from the laptop to the cell phone and displayed there in the relevant program.
The data packets that have to flow through the Fritzbox and the destination addresses of the servers with which you communicate in the network do not change.

Isn't there a way to outsmart the Fritz Box?
You could use a VPN. From the point of view of the router, this would only be contact with the VPN server. The router can no longer see what websites you are on.
