However, now my question would be if I take out my current entry single 8 GB RAM and replace two new 8 GB dual channel so a total of 16 GB will my Windows or other data go away?

No, since the RAM is deleted every time you shutdown, everything stays the same. (there's only temporary data in it, the programs need to work) Windows is installed on a permanent memory.

Maybe look for drivers or something. But otherwise that shouldn't be a problem. You should just have a look to see if the RAM fits your motherboard, i.e. Whether you can use DDR3 or DDR4 Ram (and which clock rate etc.).
You can do it without hesitation. Ram is a 'volatile' memory in which no data from the OS or programs is stored.
