I want to get the Beyerdynamic DT990 Edition, but I don't know in what ohm number. I have a simple (Behringer U-Phoria UM2) interface and want to play with the headphones, music listeners and use it here and there for my laptop and my cell phone. Now I just have to ask myself what ohm number do I need? If I get the 600Ohm variant, will I have problems with my cell phone?
The 600 ohm variant does not run on the mobile phone. Even 250 ohms cause problems.
600 ohms sounds best, but you need a potent amplifier for it.

From my own experience, I can say that the higher-impedance Beyerdynamic headphones always sound better, so the low-impedance ones. Assuming you have a potent amplifier. Example: on a really good amplifier, the 600 sounds better than the 250.
However, if the power is insufficient, the sound becomes "flat". Means: the "250" sounds better on a "quite good" amplifier due to its performance, since it is better supplied.
And which one would you advise me to now?
If it has to be on the cell phone without an amplifier, then the 250 or 32 ohm version.
The former can be quite quiet, depending on the smartphone.
Just order both and try it out.
I would advise the 250, and if that doesn't work, the smallest with 80 ohms.
