I'm really desperate right now. I have a monitor (21: 9 2560x1080, 144hz) and a not so old laptop. I would like to assemble a PC and was pretty convinced of the new RTX graphics cards. I'm someone who prefers to invest a little more and in return get the appropriate performance. Unfortunately, now I don't know whether to get the 3070 or 3080, because some believe that the 3080 is designed for 4K gameplay, but is that true? Or does the graphics card have better properties than the 3070? I would like to play every game with at least 150 fps and be able to do everything without lag. I'm not sure about the processor either. (Possibly the new ryzen 5 5600x or something)
Yes that's true. Unless you're playing 4K, the difference between the 3080 and the 3070 is marginal.

The RTX 3080 has a bit more vram than the 3070, so it is future-proof, and if you want to spend more money to meet the desired requirements then you are not wrong there.

The ryzen 5 5600, the X version, only has a higher clock rate that can be achieved by overclocking. Wait, does the ryzen 5 5600 already exist?
The 3070 will be completely sufficient for 1080p at 144fps so you don't have to worry. If you want to spend the 200-300 euro more on the 3080 even though you only gamble on 1080p then that's fine, you can then see it as future-proof.

A Ryzen 5 5600x (as you already mentioned) would be a very good choice so you can't go wrong in combination with the 3070 or 3080.
But make sure that you choose the right CPU cooler and the right custom model of the 3070 or 3080. In addition (if they are not enough) to install a few extra fans in your case to achieve good airflow and optimal CPU temperatures✌
