Which DAW?

A free DAW like cakewalk is sufficient for your purposes. You just want to take pictures anyway. Cakewalk used to be professional, it just stopped being developed. Sufficient for your purposes

A Mac is definitely not necessary. Then it's better to invest more money in an audio interface and one or more microphones. DAW is a matter of taste and of course depends on what you need.

I don't know whether you can also set this to German, but you also get to know an English interface quickly. You don't need to be able to speak English for that.
