So my question: can I disable the touch, so that I can only control the PC with the mouse and the keyboard?

The easiest way to switch off the touch function is to quit the associated Windows service. To do this, click on "Administration" in the Control Panel and then on "Services". There you will find the entry "Tablet PC input service". By right-clicking it can be terminated in the context menu.
If it remains permanently switched off even after reboots, you can additionally set the start type under "Properties", "General" to "deactivated".
