I want to buy a laptop, but I'm still undecided. I have a few favorites, which all have more or less the same components. My question: Which of the two configurations is better? Either the i7-8750H + GTX 1060 / 1660Ti or the i5-8300H + RTX 2060.

Why i5 with RTX 2060?
Because lower power (electricity) and thus less cooling demand. Less cooling requirement means that the max. Clock can be kept longer which then again means that you have more power.
This is relatively important as laptops have a real problem maintaining their performance, they are getting too warm and constantly losing performance. Notebooks are only partially suitable for games.

There's no 1060ti, that makes it a little difficult for me to answer.
There's a 1660ti, which would have the advantage that it consumes very little with very good performance, the efficiency of the RTX cards is slightly worse, especially on a mobile device can be noticeable. In addition, one would have installed a Hexacores.
There's also a 1060, this is not a Turing card, but is still based on Pascal, which is weaker and inefficient than the 1660ti and would be much weaker than a 2060th That would be a pretty bad choice.

You'll get better fps with the 8300H & 2060, but also a bit shorter battery life (given that the rest of the configuration is the same). With the 8750H & 1660ti you would have a small advantage in games that parallel many (> 8) threads (for example, Anno 1800 or Boyfriend V, generally Frostbite 3 Engine) and slightly better low fps. If you're only interested in playing, plain & simple, the i5 with the RTX card is probably the better choice.
