If you have a Windows 10 installed and then reset to factory settings, you will get a reset Windows 10.
If you have a Windows 7 installed and then reset to factory settings, you will get a reset Windows 7.

At Win7, the support (security updates, software updates, etc) will expire on January 14, 2020, but that only means that you will not receive any new packages from then on. Say the system is unsafe and sketchy, possibly running some programs then no longer on it. But the OS Win7 will still be installable.
