So hello first, my grandfather loves to play keyboard and he wants to burn my cd for Christmas with a self-written songs, but he has no idea about technology so he gave me the order. My question: can I just about the headphone output with a 3.5 mm jack plug in my laptop and the dan with audacity record or do I have something to consider?

That would certainly work if the laptop has a line in.

The problem is the lousy internal sound chips, so for a decent quality usually an audio interface is used.

Should go like that. But, BEFORE he plays it all, make sure that the sound is distortion free. So take up a little thing (where he sometimes plays lute passages) and listen to it. If it scratches and distorts, turn down the volume on the keyboard - but not below half.
Should it still scratch, you can with Audacity the "microphone" recording volume herrunterstellen. Microphone is the keyboard in your case.

You have a level meter on Audacity above - If there's a sound going from left to right. If green starts, then yellow and then orange and, if the level is strong, red on the far right.

When the level is red, too much steam is coming in and you need to turn down.
