A few questions about purchasing a computer (gaming)?

My old gaming laptop has slowly become obsolete and now I would like to get a computer that can be upgraded at some point. Since I only have a superficial knowledge of the subject and the topic is actually very complex for me, I would like to ask for your opinion here, or I would also have a few questions:

Which "brand" do you swear by / Where do you buy or order your Pcs?
Do you advise putting it together yourself or buying it ready-made?
What does it look like, do you rely more on SSD than HDD? Did I understand that correctly?
Intel or AMD?
Do I have some rest for a while with a GeForce RTX 3070 or which one would you recommend to me? (only play CoD, GTA 5, LoL and possibly various MMORPG's in the future)
When I look at Warzone, for example, there are often big updates, or new games are very huge, 1.2 TB for storage seems so little to me. How do you see it?
Last but not least, I picked out a computer (from Memory) that actually seems quite likeable to me, but I'm not sure about that and would like to ask for an opinion here too:

Graphics card: NVIDIA GeForce RTX 3070 - 8GB

Hard disk 1: 480 GB SSD

Hard disk 2: 2 TB HDD

I would also be very open to suggestions for other computers (my budget is around 1850), or just improvements to certain parts of the PC that I have posted above. I would be very grateful if you would like to inform me in detail about the matter!

The configuration looks pretty good, I would definitely recommend you to use an nvme ssd
