I'm looking for a laptop for the above price.
Purpose: watch streams / videos, research, play smaller games like Minecraft, maybe. Also video editing with Davinci Resolve. The laptop should be min. Have 8 GB.

Pretty much all laptops are suitable for the tasks you mentioned - except for video editing.
You can forget about video editing on devices in this price range. (Perhaps you can pretend to the program - if necessary with the help of a virtual machine - that you have installed a powerful graphics card. Hopefully you will not mind then that the device is almost unusable per film for a few months.)

Do you think that's enough for League of Legends, Minecraft etc?
LoL was supposed to integrate the book with its Ryzen 5 2500u +. Radeon Vega 8 - create graphics smoothly in FHD with medium to high details.
Minecraft should not become the big problem without overly complex shaders, mods and texture packs in combination. This game just has the problem of being able to use the hardware resources very inefficiently, despite the fact that the graphics on its Java programming level + Open GL - graphics interface seem comparatively simple.
When it comes to video editing / postprocessing, time is simply the magic word.
OK. Does not sound bad. If I expanded my budget to 500, would you get better things? I've already looked at a few laptops, but I don't know if it's really worth spending more. Would also upgrade to 16 GB of RAM, provided the laptops leave it
