I may know the problem, because Linux is a very small but fine operating system, it may be that the necessary mouse drivers are not yet installed. Unfortunately, you can only fix this by either packing the drivers onto your data carrier and installing them when installing Linux (with Windows, but I'm not sure about Linux), or a USB / external hard drive with the drivers on it later install. (Both require a 2 PC. Look for the drivers for your mouse / touch from the Internet

All the necessary drivers are actually included with Linux Mint. Adding things to the ISO retrospectively is really difficult… Especially for beginners.
