Since the majority today have a Wi-Fi-compatible router and, at least in private use, only a few bother to create a fixed workstation for notebooks, the need for an Ethernet port is simply eliminated for most users. Nevertheless, many notebooks are still equipped with this port.
Alternatively, there are USB-C to Ethernet adapters for around 15 euro, as you already suspect.
But ethernet is still faster
For normal data transmission, yes, but WLAN is significantly faster than pretty much any internet connection. You just don't need Ethernet for most purposes with a laptop
