2 years ago, I got my wife an Acer, 17 inches on Ebay. Exactly your price range. 1TB HDD. Could have changed in 2 years yes on SSD. Of course HD resolution. Can even my 4 year old Huawei P7 smartphone on the small display.
If SSD, then it should be already a 512er. An infinite number of hard drives do not fit in a notebook.
With 8 Gb you get along well. (The old box I'm writing for you only has 4 Gb ram, and runs wonderfully.)

I do not want newer games at all, but the mentioned "most modern" packs my HD 3850 already maximally only on 800 × 600 @ medium to max.
Therefore, it will probably soon be something in the direction of Ryzen 2200g in my notebook choice.
