Can I connect my laptop to a monitor via HDMI and use the external and internal monitors individually, or is everything just mirrored?

You can duplicate your screen only use the monitor or both at the same time is the same as with a PC you have all the options you do that under display settings

Does it all work without any problems or does the system slow down because it has to be calculated twice?

Both is possible.
Connect the monitor, then press the Windows + P key combination
You can then choose what you want.
