Program for digital transcripts at the university?

I will start studying soon and am still looking for a good digital transcription program. I have a Windows laptop with touch and pen.

I heard that One Note should not be so good, what are your experiences there?

I'm studying science so the paper should be big or endless and you have to be able to draw formulas.
