Why are they all sold out / generally so rarely available?
Could someone recommend a notebook with one of the two processors mentioned (and WITHOUT a graphics card)?
Because the demand is very high. The laptops are just the best you can get because they are understandably not available
Acer Swift 3 - should be available as far as I know
It depends on what you intend to do with it (only office and internet, or video editing or playing…), how big the price difference is and whether you are thinking about the future… I once bought a laptop with an i7, it was oversized, but for that I had it for many years (even still) and didn't have to buy a new one.
