Would there be a way to eject the USB after booting the operating system on the USB? If that doesn't work, is there a possibility that I don't always have to have the USB stick on my laptop after the boat?

Without knowing the details now, I would assume that the PC will crash because it can no longer access important files.
If you use MacOS from the USB stick, you can't eject it. You'll need to install MacOS on the laptop first, and once you've done that, just turn it off and pull out the stick.

macOS is one of the unixoid operating systems. I'm sure that the files necessary for booting can also be stored on your USB stick. Afterwards, the loaded operating system must still be able to access files, which must then be stored on a hard disk (because not everything fits in the RAM).
If you have to do this, you can also bring the few MB that are necessary for booting onto the disk.
I don't know if something like that works with Windows and macOS.
