Since your laptop can only play stereo, in this case it is the software and forwards information, and stereo can't become Dolby. There are some receivers that can scale it up, but that's not a real Dolby, but more of a stereo front-rear mix

It could be that your PC has an HDMI generation that is too old or your HDMI cable is out of date and therefore can't play 5.1.
What might also help you would be a Usb to Hdmi adapter that you can connect to the laptop and possibly transmit better sound.
Does your TV only have an HDMI connection? Maybe there's an alternative.
Does your laptop have software that can activate surround?
Or maybe you have to activate in Control Panels → Hardware and Sound → Sound → (your connected device) → Properties → Surround Sound…

Another thing you could try would be to update your Realtek sound driver on the laptop. (did I forget to write)
True, some can't be upgraded, so it will not work because, as I said, the laptop is the problem in the chain. But if you have a good headset, you can enjoy 5.1.
