Last summer I became the father of a little daughter and at the age of 40 I had a very eventful life. Since my health perspective is currently rather poor, I would like to leave my daughter a legacy where I can tell her about my life and hopefully give her good tips and food for thought for hers. The whole thing should be divided into chapters and build on each other. For me this is an incredibly important matter close to my heart that I still want to finish. In addition to a laptop and storage media, I of course need a camera, and that should only be for my direct consultation with you. Does anyone have recommendations for the type of camera and maybe even the software? I'm grateful for sharing every experience…

You didn't mention a budget. Just get a good camera. Should be handy and not too cheap. And you should be able to turn the monitor so that you can see yourself.
You can actually use any video editing program to cut. Sony Vegas is quite popular, Adobe Premiere is probably too expensive for the project.
