but not the date and also no time I can now travel to any time on the date I'm confused

The time is only indicated for train bound tickets (saving price…). Otherwise, you can travel with each train within the validity period.

If you have paid Flexprice, you can travel at any time of the day. However, only with registered train types. If you are e.g. You have not used ICE, you can't use it.
