Are 8Gb of RAM in a laptop, and is it safe for the future?

For office work, yes. For gaming maybe. For video editing no. It always depends.

Well, some image / video editing, I would possibly. But mainly doing Office YouTube etc.

Only for Office. Otherwise not at all future-proof.

8 GB is currently enough. In the future it will be rather scarce. A model with 16 GB (or you upgraded again 8GB) would be better.
