Why are most laptops offered with 1080p?

Why not? With the usual 15 inches more than sufficient. The more pixels of a /2.5/4K display also need more power.

This is currently the standard of displays.

720p are out of date and 4K is currently not profitable. That's why 1080p. That is enough for most applications.

At 13-17 ", a lower resolution would not be so nice, but it doesn't look like a current laptop.

Higher resolutions bring a) not so much with this display size and b) unfortunately many programs still have problems with such high resolutions. Then everything becomes very small, you can hardly read anything on a 13-17 "screen. And c) the power consumption is significantly higher, which leads to a lower battery life.

You don't need more pixels on such small displays. This would not really improve the graphics quality and would only lead to unnecessarily more computing power, which a.) Makes the device more expensive to buy and b.) Negatively affects the runtime in battery operation.
