I have a Chromebook because you can install Linux software then I have a Linux system on my laptop and can I play games on Steam? Eg. GTA 5 or Assassin's Creed Odyssey

Whether or not software runs on Linux depends on the software itself and whether it is compatible.
Of course, Steam itself has a Linux version as well, so it can be confirmed in the first place.
However, Steam is just a distribution platform, which means that every game it involves has to be compatible with Linux as well.

P.S. For everything else, Linux has great Windows emulators, such as WINE z.b.

Chromebooks are not incredibly powerful, to my knowledge, or am I mistaken? The games you mentioned may not run on it, Linux or not.
Wine is not an emulator
