I just wanted to take various data down on my old ipad, and forgot that all my devices MAC Book Pro and iphone are connected to each other.
Now I just wanted to deactivate the business mail accounts on my ipad and accidentally clicked "unsubscribe" in the iCloud account area - don't ask me why… Ahh I'm getting the crisis.
I even clicked that the data (which would be ok in itself) will be deleted from the ipad. Because I have them all on the iphone and the laptop.

You are now logged out of your iPad and you have now deleted everything that was saved locally (temporarily) from the iCloud on your iPad.
You should actually be able to log in and be able to access everything again. The data on iPhone and MacBook should not be deleted, since you only logged out of the iPad and not on the other devices. It is like only deleting "copies of the data".
However, if you want to make sure that nothing is lost, just a) simply look at the iPhone and MacBook or b) log into Safari on iCloud with the MacBook and check whether, for example, photos or emails are still there
It doesn't always go that well. Just cost me the photos of the whole year 2018 a few days ago. Fortunately, I still had a backup outside of the iCloud photo library.
