The Retro Thinkpads you are looking for belong to the so-called L series. They are still sold but are not as retro as they used to be. Whether you find a notebook with 2 hard drives? Probably not, although I still have one. However, ThinkPads are not so much intended as desktop PC replacements, so it does not make much sense to use two hard drives of the same design, rather than a large SSD.
