With your budget, I would take a closer look at the MacMini M1. With the MacMini you have an advantage over the MacBooks through the use of external screens.
The P3 color space is nice, but with a good 100% sRGB BenQ, LG, or budget Eizo you can achieve excellent results for the web.
Otherwise, if it has to be something mobile, I would take a closer look at the M1 MacBooks, as mentioned. There you will be well served and have enough performance for all your projects.
The chip easily calculates image files in the middle GB range (8-18 GB) without any problems when using filters and the like. The export is just as rapid.
If it should be Windows, then take a look at Dell's XPS series. You will be served just as well.
