Well, there are tablets that can be "drilled out" with memory cards up to a TB. However, which are still affordable up to 500 GB.
And of course there are also neat apps for editing.
For example, the current Galaxy Tab S6 lite. That has a pen that makes editing easier. Mouse and keyboard can also be connected via Bluetooth, the picture quality is pretty good.
However, I would never recommend a Micro SDHC as the only storage medium. Always save the images in parallel on a hard drive.
Laptops, on the other hand, have larger screens than tablets.

Yes, there are large memory cards - but not every tablet supports them.
In my view, using a tablet for editing is not an option. Tablets and the apps available for them are designed for finger operation and this (even if you use a pen) is never as precise as corresponding editing options on the PC.
My idea for a workflow would be:
Photos from camera to PC
Edit on the PC
Storage of the original and the processed status on a backup medium
Storage of the edited status in a cloud storage
Use a tablet to display images from the cloud storage

In general, the following applies: Cheaper tablets often do not have the brilliance of the display and are certainly slower, or may not yet be able to handle the large capacities of microSD cards. But I'm not a specialist.
