Headphones: either Beyerdynamic DT 770 PRO 80 Ohm or Audio-Technica ATH-M50 X
Soundproofing (maybe): The t.bone Micscreen LE
How would you rate my purchase, does the interface fit? Do you find something inappropriate? Which laptop processor do I need at least for this?

a device with hard disk, USB connection for the PC, burner, multi-channel and effects (some also with burner). The advantage is you can record without latency and mix live. The quality is very good and it is easier than if you are a newcomer with good audio software. You can also take it with you.
Sounds pretty good so far. Maybe I would rather use a 2i2 in perspective, but if you are sure to use only one mic at a time, that is of course enough.
Of course, what kind of laptop also depends on the DAW used. But it should be an Intel i5, better an i7 and not save on RAM, at least 16GB, better 32GB.
And a tip, switch off all energy saving functions from the BIOS and also from the OS. It took me a lot of time to find out why I had dropouts all the time. In the end it was due to the energy option "balanced", after I changed it to "Performance" it ran smoothly.

Have no experience with the SM7B myself, but what you read and hear in many reviews is that it should be relatively quiet.
However, the Focusrite also has a built-in pre-amp, although I don't know in detail how strong it is in the "small" models (I have a Clarett 8Pre USB), which already has decent pre-amps. So I would think that the small Scarlett models have already built something reasonable there, but as I said, I didn't try it.
And that no signal arrives at all sounds more like a defect to me, either on the mic or on the pre-amp. Although I think I've even seen a review of the SM7B on YouTube, which was used on the 2i2. So it should actually work.
