I shut down my laptop completely a couple of days ago (otherwise it's always just saving energy) and was just about to log into my Google account.
I did not provide a phone number or anything else when registering.
It said that google doesn't know my device and that I have to confirm this with my phone number. What can I do now?
If that is there, then you will probably already have a phone number on file. If you are still signed in to your Google account on any device, then you can look it up. Perhaps this number is also out of date and you should then renew it.
Isn't there any button that says you don't have this information?

No, there's no such thing and I certainly have no phone number on file, I just checked that
Then deposit a mobile number now and try to register again
