My question now is whether one with 256GB SSD is sufficient.

Should be enough. You won't process large amounts of data on your laptop anyway.
Computer science studies didn't just start yesterday. 20 years ago, students were able to graduate with significantly less PC power.
Note: A fast and large turbo PC is only needed for games.

Might not. Then some do it the other way around, install Linux and Windows as virtual machines. With several virtual desktops you can make the interfaces clearer.
Linux is the more modern system anyway.
With a good division into partitions, you can also exchange a Linux operating system at any time without overwriting your personal documents.
For my system I chose 32GByte for /, but only occupied 10. You can use the rest as / home for data. A virtual Windows is also part of it.
