Writing is writing, that in the end you write on glass, you won't notice it after a week. I wouldn't worry about that.
Whether it will be 11 "or 12.9" is a decision of the desired mobility and luxury. The 12.9 "(I own it myself) is powerful and should not be underestimated! Just chill out in bed and forget Netflixen from your hand without a support / stand. But the sound is better than with the 11".
For working, browsing websites, viewing pictures and videos, the 12.9 "is of course more pleasant as long as you are sitting at your desk or can put the device down. As far as writing is concerned, opinions are shared.

If you want to move the notes back and forth, use a program that all your devices can access. I'm using OneNote from Microsoft and the notebooks are in the cloud (DropBox). I can easily access it with a PC, iPhone, iPad.
