If the person who owns the phone has installed special apps that will record the traffic then he can see everything that is sent about it, even if most of it would be useless for that person as much of it is encrypted. But what he can see is with which servers you connect (can be internet pages but also eg connections of programs) as well as unencrypted data traffic. What files are on your laptop, he could only see if he would hack into your laptop

In general, you can read out all packets within a network if they are not encrypted.
